Thanksgiving Debrief

Overall, it was a huge success!

Here is what we ended up serving with comments:
Menu:
Butter Herb-Rubbed Turkey, Stuffed - we ripped the skin a few times and it was hard to figure out where to put the thermometer - the thermometer ended up reading a pretty high number but the turkey wasn't dry at all. sean did a great job.  we let some guy Paul carve it. i wish we had done it but it was hard with everyone over.
Joy of Cooking Classic Stuffing - the stuffing wasn't flavorful enough, but the quantity was perfect. we had 11 people and a whole pan of leftover stuffing, thankfully. about half was in the turkey. we heated it up in the oven before serving. next time, when making the bread cubes I would make them flavorful (olive oil? garlic? other?) - this time all I did was cut up the cubes and toast them. I think that would help.  the mixins were fine (onion, parsley, etc.) decent recipe. i used two loaves of bread and it was the right amount.
Cafe Flora's Butternut Squash and Kale Saute with Brown Butter - this turned out not to be great for thanksgiving. kind of hard to get ready at the last minute and both sean and i agreed we felt like we missed out on a good dish of sauteed greens.  in the future, i would do the squash and greens separately. maybe even do the butternut squash tahini salad and cook greens up separately, a la mariquita or 101 cookbooks.
Garlic Mashed Potatoes from Bon Appetit - these were good and were fine to make ahead. i followed jo's advice and mashed them in the pot but kept them very dry. then i covered it with butter and a layer of cream.  that allowed me to mash it up later.  they were warm because they were on the stove.  turned out perfect.
Roasted Cranberry Sauce from Bon Appetit - this was too fancy.  annoying to have all the herbs. better to keep it plain.
Orangette's Gin Sauerkraut with Caraway - this was not bad. some people really liked it. i'm not sure i really like sauerkraut that much though. not sure i would do this again.
Roasted Veggie Stuffed Pumpkin
Mushroom Gravy with Taragon, and Regular Turkey Gravy - would be good to improve both gravies.... we only did cornstarch ones for ange. she and sean made the turkey gravy. i made the mushroom one ahead of time but it was gritty - otherwise not bad.
Ange's Mashed Vanilla Sweet Potatoes by 101 Cookbooks - tasted like a creamsicle! very sweet.
Salad from Kari - i think we had lots leftover. seemed like people stuffed themselves on everything else.
Green Bean and Leek Salad from Kari by 101 Cookbooks - this was a really nice dish.

Beginning with:
Smoked Salmon, Red Onion, and Capers on Baguette Toasts these were ok - maybe not great for thanskgiving.
Deviled Eggs huge hit - went well with thanksgiving dinner.
Cafe Flora's Mushroom and Pecan Pate, with Cornichons, Green Peppercorn Aioli, and Salame big hit too!
Bread, Cheese, Crackers
Baked Brie with Brown Sugar and Pecans biggest hit of all for apps!  
Garlic and Lemon Green Olives

Ending with:
Sean's Apple Pie and Vanilla Ice Cream outstanding apple pie - sean did a  great job. we used pippin apples from mariquita farms.  sean used joy of cooking recipe.
Ange's Pumpkin and Pecan Pies  yum!
Accompanied by:
Champagne (with Chambord?)
Wine

Also, we didn't have any biscuits or rolls, which was too bad. It was definitely missing.
